Gluten Free Carrot Cake with Lemon Mascarpone

Episode 1 covers our first recipe, showing you how to make a delicious gluten free carrot cake. It's moist with layered textures with crunchy walnuts and sweet coconut shavings. The result is delicious with wintery undertones. The lemon topping really brings it to life and the carrots add a natural sweet note to this cake.


Ingredients:

3 medium size eggs
4 large carrots
1 lemon
1/2 cup shaved coconut
1/2 cup chopped walnuts
1/2 cup raisins
1/2 cup sugar
2 tsp cinnamon or allspice
1 tablespoon vanilla extract or 1 packet vanilla sugar
2 cups Schar Gluten Free Flour (or mix your own)
1 tablespoon yogurt
1/3 cup vegetable oil
3 tablespoons of mascarpone or cream cheese
